Have A Good Weekend

I am very excited for this weekend.  
Tonight, Michelle and I are having a girl's night at our place.  
It has been a long time since we have had anything at our house. 
I love hosting things and what a better thing to host than a girl's night with yummy cocktails and junk food.  
Then on Saturday my mom is coming down. 
We are going out to dinner and the play Wicked with a couple of her friends.  
It should be a great weekend. 
Now if only the sun would show its face around here.

Yesterday, Derek and I sat down over tea and oranges. 
No t.v., no music, no one else, just the two of us {and Bailey puppy}  
It was nice to actually talk to one another.  
It made me realize that we had gotten so used to coexisting that some where we had stopped being friends. 
This made me sad and I realized I needed to work on my relationships.  
Not just with Derek, but with my friends too.  Friendships are just as important as romantic relationships.  
So my new goal is to work on telling my loved ones and friends that they do matter to me.

it that makes me so happy every time I use it.}

Good End To A Bad Day

Yesterday was not a good day.  I couldn't seem to find anything that would help pick me up. That is until I decided to make french toast for dinner.  I love french toast and it did just the trick.  It wasn't as good as my dad used to make, but since I have developed a cinnamon allergy over the last couple of years, I didn't add it.  
I did beat four eggs, 1/2 cup of milk (just eyeballed it), and a teaspoon of vanilla together.  I then soaked each piece of bread for a few seconds on each side and toasted them in a a buttered pan.  I enjoyed my french toast with sliced strawberries and maple syrup on top.  What a great way to end a bad day!

I'm so sorry that I have been such a bad blogger lately.  Last week was filled with homework, projects, and studying for midterms.  Thankfully that week is over and now it is a new one.  
I do have to say even though last week was crazy busy, I had a wonderful weekend at my parents house.  I got to spend time with two of my best friends, Kristi and Ariel.  
I got to see my beautiful niece, Riley!  And Easter was filled with blueberry pancakes and chocolate.  What more could I ask for?

If there is one thing that I have learned to love over the years it is 
As a small child, I hate the thought of eating a meal in the morning.  
Now I can't wait for the weekends when I can have a big sit down breakfast.
This past weekend Derek made us  homemade egg sandwiches on 
English muffins with tomatoes cheese and basil.
He is so good to me! 
Plus they were delicious which made the gesture that much better.

Things I'm loving

Today has been surprisingly a good day.  
My Thursdays are normally crazy, but today as gone smoothly so far. 
So I thought I would share something that are just making my day extra good.
OPI's new line of colors called Texas. 
I am a huge Texas fan. 
I love it there!!!
I think it is absolutely beautiful there and these new nail colors make me extra
excited to paint my nails.  
Turkey Bagel Sandwiches.  
I had one for lunch and it was amazing.
Mine was on an everything bagel which made it extra tasty.

I really want a pair! They are simple but put together.
They would be perfect for running to class or doing errands.
I love all the colors they come in too.

I love Bailey dog.  
She has been so loving lately too,
which adds to her cuteness.

Cheesy Pasta

I love trying new things and mixing up old recipes to make something new.  
I took my favorite {mac & cheese} recipe that my mom always uses and turned it into something more.  
I added my favorite veggies and replaced the tradition elbow pasta with thin spaghetti.  
It turned out amazing!  
I love the fresh crunch of steamed veggies with the nice cheesy sauce.  
Most people I know are afraid of making their own sauce but it really is so simple.  
It's hard to completely mess up the sauce and make it not saveable.  
It really is worth trying because the results can be amazing!

Weekend in Tacoma

This past weekend I went up to Tacoma, Washington to visit Riley, my roommate from the dorms. 
I went with Michelle and Michelle to help Riley celebrate her birthday.  
It was lots of fun and so good to see an old friend.  

To help celebrate I made strawberry cupcakes with cream cheese frosting and coconut topping.  
I used this {recipe} but cheated and used store bought frosting 
and just dipped the cupcakes into the coconut.

Thursday is the worst day of the week for me.  I have class from 10-6.  
his wouldn't be so bad if I wasn't notoriously known for being a 
{Hot Mess}  
I pretend that I'm so well put together and organized 
but truth be told I would lose my own head sometimes if it wasn't attached to my body.  
People closest to me know that I'm either in my mama Lo mode {meaning I'm playing mom} 
or my hot mess mode.  I'm so good at taking care of others and making sure everything is in place for them 
but when it comes to my own life I'm horrible at it. 
I am always running late, forgetting things, losing things, you name it.  
Some how it seems that every Thursday hot mess mode it is.  
I guess I just better get used to it.

I have been getting a lot of grief lately for my very bad redbull habit.  
I decided to work on not drinking it, so I have turned to 
I have always loved coffee, so why not just drink more of it.
Now instead of not being able to function without redbull, 
it's not being able to function without coffee.
I love it hot, cold, plain, or in a specialty drink.
Anyway is good with me as long as I get some caffeine.
